be a mistake, as would calling it moist – I think I’ve just invented The Saturated Lemon (Drizzle) Cake.
Gorgeous...as long as you like lemon and rather damp cake!
[Note: On first tasting my cake Debbie nominated me the winner outright, strangely enough during the course of the voting I believe some arms were twisted, because from having the most votes and my better-half conceding defeat, I was suddenly relegated to second position. Strange, life, isn’t it!]

The last time I baked a cake was when the children were small with maybe the odd cake since then.
Of course baking a cake isn’t the simple thing I thought it would be, for a start there’s all the equipment one needs from baking tins to scales to skewers. Luckily Wild Leaf had all the essentials and I must have visited there a couple of times as I remembered something else I needed. I promised myself that I would
use the equipment again and not just consign it all to the cupboard.
As for the recipe for Lemon drizzle I chose the BBC Good Food one and Ron chose the Mary Berry one.
I decided to use a machine to blend my ingredients, not fancying the hard labour of all that creaming the margarine with the sugar. The web had also recommended using margarine and not butter, so soft Stork it was. All went well except that as I had to use my small oven the cake did catch and burnt ever so slightly on the top. The crust was a little harder than I would have liked so the lemon mixture did not soak all the way through the cake. However with a cup of tea the cake was lovely, but then I am biased!
The verdict from the family
Day 1 Emma and Mark thought Ron’s cake which was soaked in lemon was the best. Day 2 Rosanna and Darren thought Debbie’s had settled nicely into a proper cake but Ron’s was too soggy.
Day 3 Sarah and Matt thought Debbie’s cake was the best. Ron’s cake was too small and Matt seeing the commercial side of things realised it was a no-goer!
